2 cups (300g) dates or medjool
2 cps (280g) raw cashew nuts
125g Food Fibre Blend (optional)
¾ (75g carob powder
A pinch of Celtic or Himalayan Salt
½ cup (40g) shredded coconut
2 tablespoons vanilla power or vanilla oil (Health Shop)3 to 4 tablespoons of cold water
I use the juice of an orange instead of water when making orange flavour balls and three drops of Young Living orange essential oil. For Peppermint flavour I use Young Living essential oil Peppermint and water.
Combine chopped dates, select food fibre blend if using it, nuts that you want, carob powder, salt in the food processor or Thermomix.
Pulse and process the ingredients together until the texture is coarse.
Add the shredded coconut, and quick pulse, and add the vanilla powder, a little water at a time until it reaches a dry but moist consistency.
Scrape the dough mixture into bowl, and start making the balls then roll in desiccated coconut or shredded coconut.
Chill in fridge or freezer, I like it in the freezer.
